A visually beautiful pastel tangerine soup with generous coconut milk and substantial ginger that tasted even better the next day.

Myanmar: Ohn No Khao
Burmese coconut noodle soup with chickpea tofu, light yet filling, and my partner praised the tofu unprompted.

Poland: Bialys
Traditional Polish rolls from Bialystok that I turned into domed little pillows instead of the proper indented shape. They still tasted great.

Nigeria: Jollof Rice
I accidentally made Nigerian jollof when I meant to make Senegalese. It was totally bomb and divine, so I'm not complaining.

Italy: Pane e Panelle
Sicilian chickpea fritter sandwiches from Palermo. Salty crispy exterior, soft delicate interior, and kept me full all morning.
